Instructions

  1. Blend the cottage cheese, 2% milk, and ranch seasoning until completely smooth. Set aside.
  2. Preheat the air fryer to 375°F.
  3. Place the grilled chicken bites in a single layer. Work in batches if necessary.
  4. Air fry for 6 to 8 minutes, shaking halfway through, until hot and 165°F.
  5. Transfer the chicken to a bowl. Add Frank's RedHot Buffalo Wings Sauce and toss to coat.
  6. Warm the tortillas for 10 to 15 seconds in the microwave so they fold without tearing.
  7. Place 1/2 cup romaine down the center of each tortilla. Add 3 ounces buffalo chicken and 2 teaspoons blue cheese crumbles.
  8. Drizzle 1 tablespoon cottage-cheese ranch inside each wrap. Fold in the sides, roll tightly, and place seam-side down.
  9. Serve each wrap with 1 cup celery sticks, 1 bag Quest Nacho Cheese Protein Chips, and 1 tablespoon cottage-cheese ranch for dipping.

Freezer Storage

  1. Do not freeze assembled wraps, cottage-cheese ranch, romaine, celery, or Quest chips.
  2. Cool the chicken completely and freeze it separately without the buffalo sauce.
  3. If four servings remain, use a gallon-size freezer bag. If fewer than four servings remain, use a quart-size freezer bag.
  4. Remove as much air as possible, seal, and freeze flat for up to 3 months.

Reheating Instructions

  1. Thaw the chicken overnight in the refrigerator.
  2. Air fry at 375°F for 4 to 6 minutes, shaking halfway through, until the chicken reaches 165°F.
  3. Toss the hot chicken with fresh buffalo sauce, then assemble with fresh tortillas, romaine, blue cheese, and cottage-cheese ranch.
