Instructions

  1. Add the drained albacore tuna to a medium bowl and break it apart with a fork.
  2. Add the Greek yogurt, light mayonnaise, celery, dill pickles, Dijon mustard, pickle juice, garlic powder, onion powder, salt, and black pepper.
  3. Stir until everything is evenly combined.
  4. Divide the tuna mixture evenly between the 4 Mission Carb Balance tortillas.
  5. Top each wrap with 1 1/2 ounces reduced-fat shredded cheddar cheese.
  6. Fold the sides of each tortilla inward and roll tightly into a wrap.
  7. Heat a large nonstick skillet over medium heat.
  8. Place the wraps seam-side down and cook for 2 to 3 minutes per side, until the tortilla is golden and crisp and the cheese is melted.
  9. For an air-fryer option, cook at 375°F for 5 to 7 minutes, flipping halfway through, until golden and the cheese is melted.
  10. Slice in half and serve warm.

Freezer Storage

  1. Assemble the wraps but do not cook them.
  2. Wrap each tuna melt tightly in parchment paper and then foil.
  3. Place all four in a gallon freezer bag.
  4. Freeze for up to 1 month.

Reheating Instructions

  1. For best texture, thaw overnight in the refrigerator.
  2. Air fry at 350°F for 6 to 8 minutes, or heat in a skillet over medium-low heat for 3 to 4 minutes per side.
  3. For a microwave option, heat for 60 to 90 seconds, then crisp briefly in a skillet if desired.

40/400 Notes

  • Greek yogurt keeps the tuna filling creamy while adding protein.
  • Pickle juice adds acidity so the filling stays flavorful without relying on a large amount of mayonnaise.
