Behind the Recipe
Savory cottage cheese and sweet caramel play off each other here, with a Built Puff bar on the side adding crunch and pumpkin-cookie flavor for the season.
Ingredients
- 1 cup low-fat cottage cheese
- 2 tablespoons chopped pecans
- 1 tablespoon Splenda brown sugar blend (optional, for candying the pecans)
- 2 tablespoons sugar-free caramel sauce
- 1/2 teaspoon ground cinnamon
- 1 Built Puff Pumpkin Cookie Chunk bar, served on the side

Instructions
- Optional upgrade: toss the chopped pecans with the Splenda brown sugar blend in a small microwave-safe bowl and microwave for 30 to 45 seconds, stirring halfway, until fragrant. Let cool for 1 minute so they crisp up.
- Scoop the cottage cheese into a bowl and sprinkle with the cinnamon.
- Top with the pecans (candied or plain) and drizzle the sugar-free caramel sauce back and forth in a zigzag over the top.
- Serve with the Built Puff bar on the side, or break it up and stir it in if you'd like extra crunch.
40/400 Notes
- Short on time? Skip the candying step — plain chopped pecans still taste great here.
- Keep the Built Puff bar whole and serve it alongside for the cleanest presentation, or break it up right before eating for extra crunch in the bowl.
- Warm the caramel sauce for about 10 seconds if you want it extra drizzly.
