Instructions

  1. Preheat the air fryer to 375°F.
  2. Rub the whole chicken breasts with the olive oil, garlic powder, onion powder, salt, and pepper. Air-fry for 10 to 14 minutes, turning halfway, until each breast reaches 165°F. Rest for 5 minutes, then slice or dice.
  3. While the chicken cooks, add the onion, carrots, celery, wild rice, bone broth, thyme, salt, and pepper to a large soup pot.
  4. Bring to a boil, reduce to a gentle simmer, cover, and cook according to the wild rice package directions, approximately 35 to 40 minutes, until the rice and vegetables are tender.
  5. Remove the pot from the heat. Place the Greek yogurt in a bowl and slowly whisk in 1 cup of hot broth. Stir the tempered yogurt mixture back into the soup without boiling.
  6. Stir in the cooked chicken. Measure the finished soup and adjust with additional hot broth if needed so the total yield equals 12 cups.
  7. Divide into six servings of 2 cups each, confirming that each portion contains 4 ounces cooked chicken.
