Behind the Recipe

Instructions
- Preheat the air fryer to 375°F.
- Rub the whole chicken breast with 1/2 teaspoon olive oil, garlic powder, onion powder, salt, and pepper. Air-fry for 10 to 14 minutes, turning halfway, until the thickest part reaches 165°F. Rest for 5 minutes before slicing.
- While the chicken cooks, add the dry pasta, bone broth, and remaining 1/2 teaspoon olive oil to a small saucepan. Bring to a gentle boil and cook uncovered, stirring often, until the pasta is tender and only a few tablespoons of liquid remain.
- Reduce the heat to low. Stir in the pumpkin, Greek yogurt, Parmesan, and sage until smooth and warmed through. Do not boil after adding the yogurt.
- Transfer the full pasta mixture to a shallow bowl or wide plate and top with exactly 4 ounces sliced cooked chicken.
40/400 Notes
- Cook the chicken breast whole and slice it only after the five-minute rest.
- Add 1 to 2 tablespoons water if the pasta needs more liquid before it becomes tender.
- Pumpkin should taste savory here; do not add cinnamon or sweetener.
