Instructions

  1. Place the chicken breasts in the bottom of a 6-quart crockpot.
  2. Pour the chicken bone broth, soy sauce, sesame oil, and rice vinegar over the chicken.
  3. Add the stevia brown sugar, minced garlic, granulated garlic, onion powder, and black pepper.
  4. Turn the chicken once to coat it in the sauce.
  5. Cover and cook on LOW for 6 to 7 hours. Leave the crockpot covered until the chicken reaches 165°F and shreds easily.
  6. During the final 20 to 30 minutes, add the frozen broccoli florets to the crockpot and replace the lid.
  7. Shred the chicken directly in the crockpot. Stir the chicken and broccoli into the garlic sauce and let rest for 5 minutes.
  8. Microwave the jasmine rice and cauliflower rice separately according to their package directions, then combine thoroughly.
  9. Divide the rice mixture evenly between six servings. Add 4.5 ounces cooked garlic chicken, broccoli, and one-sixth of the sauce to each serving.

Freezer Storage

  1. Allow the chicken, broccoli, sauce, and rice mixture to cool completely.
  2. If four servings remain, use a gallon-size freezer bag. If fewer than four servings remain, use a quart-size freezer bag.
  3. Portion the chicken, broccoli, sauce, and rice mixture together.
  4. Remove as much air as possible, seal, and freeze flat for up to 3 months.

Reheating Instructions

  1. Thaw overnight in the refrigerator.
  2. Transfer one serving to a microwave-safe bowl and add 1 tablespoon chicken bone broth or water.
  3. Cover loosely and microwave for 90 seconds. Stir, then continue heating in 30-second intervals until hot throughout.

  • Keep the rice mixture out of the crockpot and prepare it just before serving.
  • Add the broccoli only during the final 20 to 30 minutes so it stays tender instead of mushy.
