Ingredients
Crockpot Garlic Chicken
- 2 1/4 pounds raw boneless, skinless chicken breast
- 1/2 cup Simple Truth Organic Chicken Bone Broth
- 1/3 cup Kikkoman Less Sodium Soy Sauce
- 1 tablespoon Shirakiku 100% Pure Sesame Oil
- 1 tablespoon Marukan Rice Vinegar
- 1 tablespoon stevia brown-sugar substitute
- 1 tablespoon minced garlic
- 1 teaspoon granulated garlic
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 4 cups frozen broccoli florets
Cauliflower-Jasmine Rice Mixture
- 2 10-ounce pouches Kroger Classic Grains Jasmine Rice from the freezer section
- 2 10-ounce bags Birds Eye Steamfresh Original Riced Cauliflower

Instructions
- Place the chicken breasts in the bottom of a 6-quart crockpot.
- Pour the chicken bone broth, soy sauce, sesame oil, and rice vinegar over the chicken.
- Add the stevia brown sugar, minced garlic, granulated garlic, onion powder, and black pepper.
- Turn the chicken once to coat it in the sauce.
- Cover and cook on LOW for 6 to 7 hours. Leave the crockpot covered until the chicken reaches 165°F and shreds easily.
- During the final 20 to 30 minutes, add the frozen broccoli florets to the crockpot and replace the lid.
- Shred the chicken directly in the crockpot. Stir the chicken and broccoli into the garlic sauce and let rest for 5 minutes.
- Microwave the jasmine rice and cauliflower rice separately according to their package directions, then combine thoroughly.
- Divide the rice mixture evenly between six servings. Add 4.5 ounces cooked garlic chicken, broccoli, and one-sixth of the sauce to each serving.
Freezer Storage
- Allow the chicken, broccoli, sauce, and rice mixture to cool completely.
- If four servings remain, use a gallon-size freezer bag. If fewer than four servings remain, use a quart-size freezer bag.
- Portion the chicken, broccoli, sauce, and rice mixture together.
- Remove as much air as possible, seal, and freeze flat for up to 3 months.
Reheating Instructions
- Thaw overnight in the refrigerator.
- Transfer one serving to a microwave-safe bowl and add 1 tablespoon chicken bone broth or water.
- Cover loosely and microwave for 90 seconds. Stir, then continue heating in 30-second intervals until hot throughout.

- Keep the rice mixture out of the crockpot and prepare it just before serving.
- Add the broccoli only during the final 20 to 30 minutes so it stays tender instead of mushy.
