This is a quick meal for the days when I want something fresh and crunchy but have no interest in cooking. I skip the croutons from the salad kit and replace them with Parmesan Whisps and roasted edamame. That keeps the crunch while adding more protein and fiber, and the individual grilled chicken pack makes the serving simple.
Ingredients
- 2 cups romaine lettuce from a Costco Caesar salad kit
- 1 Fresh Additions grilled chicken breast pack, 3.2 ounces
- 2 teaspoons Caesar dressing from the salad kit
- 1 tablespoon Parmesan cheese from the salad kit
- 2/3 serving Whisps Parmesan Cheese Crisps, about 19 grams, lightly crushed
- 1/2 serving The Only Bean Sea Salt Crunchy Roasted Edamame, about 15 grams
- Croutons from the salad kit, omitted

Instructions
- Add the romaine to a large bowl.
- Toss the romaine with 2 teaspoons of Caesar dressing and 1 tablespoon of Parmesan from the kit.
- Add the full pack of grilled chicken.
- Top with the crushed Parmesan Whisps and roasted edamame.
- Leave out the packaged croutons and serve immediately.
