The chicken and creamy sauce cook all day without stovetop preparation. At night, Barilla Protein+ Penne cooks in chicken bone broth using a no-drain method, then gets folded into the creamy Tuscan chicken.
Ingredients
- 2 pounds raw boneless skinless chicken breast
- 3/4 cup Daisy 4% Cottage Cheese
- 2 ounces Philadelphia 1/3 Less Fat Cream Cheese, cut into small pieces
- 3 cups Simple Truth Organic Chicken Bone Broth, divided
- 2 ounces Bella Sun Luci Julienne-Cut Dry-Packed Sun-Dried Tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon granulated garlic
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces dry Barilla Protein+ Penne
- 5 ounces baby spinach
- 1/4 cup BelGioioso Freshly Grated Parmesan Cheese

Instructions
- In the morning, place the chicken breasts in the bottom of a 6-quart crockpot.
- Spread the Daisy cottage cheese over the chicken, then add the pieces of cream cheese.
- Pour 1 cup of chicken bone broth around the chicken. Add the sun-dried tomatoes and sprinkle the Italian seasoning, granulated garlic, onion powder, salt, and black pepper over everything.
- Cover and cook on LOW for 7 to 8 hours, until the chicken reaches 165°F and shreds easily.
- At night, bring the remaining 2 cups of chicken bone broth to a boil in a medium saucepan. Add the Barilla Protein+ Penne and reduce to a steady simmer.
- Cook uncovered for 8 to 10 minutes, stirring frequently, until the pasta is al dente and nearly all the broth has been absorbed. If the broth is absorbed before the pasta is tender, add water 2 tablespoons at a time. Remove from the heat and rest for 2 minutes.
- Shred the chicken directly in the crockpot.
- Stir the shredded chicken and contents of the crockpot together until the sauce looks creamy.
- Add the baby spinach, cover, and let it wilt for about 5 minutes.
- Stir in the BelGioioso Parmesan, then fold in the cooked protein penne.
- Divide the finished meal into six 11-ounce servings.

- The dry-packed tomatoes soften in the cottage-cheese and broth sauce during the long cook.
