Instructions
- In the morning, place the pre-sliced beef stir-fry strips in a 6-quart crockpot.
- Add the beef bone broth, Kikkoman soy sauce, stevia brown-sugar substitute, Marukan rice vinegar, Shirakiku sesame oil, minced garlic, ground ginger, and black pepper. Stir to coat the beef.
- Cover and cook on LOW for 7 to 8 hours, until the beef is tender.
- At night, whisk the cornstarch and cold water together until smooth, then stir the slurry into the crockpot.
- Add the frozen Birds Eye broccoli, cover, and cook on HIGH for 20 to 30 minutes, until the broccoli is tender and the sauce thickens.
- Cook the Birds Eye riced cauliflower and one Kroger frozen jasmine-rice pouch according to their package directions.
- Combine the cooked jasmine rice and cauliflower rice to make the rice medley.
- Divide the beef-and-broccoli mixture among six bowls and serve each with approximately 3/4 cup rice medley.
40/400 Notes
- Pre-sliced beef keeps morning preparation under five minutes.
- Do not add the broccoli in the morning because it will become too soft during an all-day cook.
- The Kroger rice package contains two pouches; use one 10-ounce pouch for this recipe.
- Measure the sesame oil because one tablespoon contributes 120 to 130 calories to the batch.
- Nutrition is approximate and varies by the leanness of the beef and product labels.
