High-Protein Ground Beef Sweet Potato Bowl

I kept seeing the cottage cheese and ground beef bowl all over social media, and I finally had to find out whether it lived up to the hype. The combination sounded a little unusual, but the macros were hard to ignore and it had all the pieces of a balanced meal. Once I tried it, the flavor completely won me over. The hot beef and sweet potato make the cottage cheese creamy and give it a tangy, almost sharp-cheddar flavor. It is now one of my regular go-to meals, and spinach, broccoli, or another green vegetable would be an easy addition.
Ingredients
- 4.5 ounces 96/4 lean ground beef
- 1/2 cup Daisy 4% Cottage Cheese
- 1/2 cup peeled sweet potato, cut into bite-size cubes
- 1/4 teaspoon olive oil
- 1 tablespoon avocado, diced
- Kinder's steak seasoning, to taste
- Salt and black pepper, to taste
- Tajín seasoning, to taste
- 1 to 2 tablespoons water
Instructions
- Preheat the air fryer to 390 degrees Fahrenheit.
- Toss the sweet potato cubes with the olive oil, salt, and black pepper.
- Air-fry the sweet potato for 10 to 14 minutes, shaking the basket halfway through, until browned and fork-tender.
- Meanwhile, cook the ground beef in a nonstick skillet over medium heat, breaking it apart with a spoon as it browns.
- When the beef is mostly cooked, add the Kinder's steak seasoning and 1 to 2 tablespoons of water.
- Stir and continue cooking until the beef is fully browned, the seasoning is evenly distributed, and most of the water has cooked away.
- Add the ground beef and roasted sweet potato to a bowl.
- Spoon the cottage cheese into the bowl and top with the diced avocado.
- Finish with a sprinkle of Tajín and serve.

- Adding the water after the beef begins browning keeps very lean beef moist without preventing it from browning.
- For extra vegetables, add sautéed spinach, roasted broccoli, or another green vegetable you enjoy.
