Behind the Recipe

I kept seeing the cottage cheese and ground beef bowl all over social media, and I finally had to find out whether it lived up to the hype. The combination sounded a little unusual, but the macros were hard to ignore and it had all the pieces of a balanced meal. Once I tried it, the flavor completely won me over. The hot beef and sweet potato make the cottage cheese creamy and give it a tangy, almost sharp-cheddar flavor. It is now one of my regular go-to meals, and spinach, broccoli, or another green vegetable would be an easy addition.

Ingredients

  • 4.5 ounces 96/4 lean ground beef
  • 1/2 cup Daisy 4% Cottage Cheese
  • 1/2 cup peeled sweet potato, cut into bite-size cubes
  • 1/4 teaspoon olive oil
  • 1 tablespoon avocado, diced
  • Kinder's steak seasoning, to taste
  • Salt and black pepper, to taste
  • Tajín seasoning, to taste
  • 1 to 2 tablespoons water

Instructions

  1. Preheat the air fryer to 390 degrees Fahrenheit.
  2. Toss the sweet potato cubes with the olive oil, salt, and black pepper.
  3. Air-fry the sweet potato for 10 to 14 minutes, shaking the basket halfway through, until browned and fork-tender.
  4. Meanwhile, cook the ground beef in a nonstick skillet over medium heat, breaking it apart with a spoon as it browns.
  5. When the beef is mostly cooked, add the Kinder's steak seasoning and 1 to 2 tablespoons of water.
  6. Stir and continue cooking until the beef is fully browned, the seasoning is evenly distributed, and most of the water has cooked away.
  7. Add the ground beef and roasted sweet potato to a bowl.
  8. Spoon the cottage cheese into the bowl and top with the diced avocado.
  9. Finish with a sprinkle of Tajín and serve.

  • Adding the water after the beef begins browning keeps very lean beef moist without preventing it from browning.
  • For extra vegetables, add sautéed spinach, roasted broccoli, or another green vegetable you enjoy.
