Instructions
- Preheat the oven to 425°F and line a large sheet pan with parchment paper.
- Add the sweet potatoes to one side of the sheet pan. Toss with 2 teaspoons avocado oil, half of the garlic powder, half of the onion powder, 1 teaspoon Italian seasoning, and a little of the salt and pepper.
- Roast the sweet potatoes for 10 minutes.
- Meanwhile, cut the turkey breast into large, evenly sized pieces.
- Toss the turkey with the remaining avocado oil, minced garlic, remaining garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Remove the sheet pan from the oven. Add the turkey and green beans alongside the sweet potatoes.
- Return to the oven and roast for another 15 to 18 minutes, or until the turkey reaches 165°F and the sweet potatoes are tender and browned.
- Whisk together the cranberry sauce, Grey Poupon, water, and apple cider vinegar.
- Divide the turkey, sweet potatoes, and green beans evenly among four servings.
- Drizzle each serving with one-fourth of the cranberry Dijon sauce.
Freezer Storage
- Cool everything completely.
- Divide into four individual freezer containers.
- Freeze for up to 2 months.
- Freeze the cranberry Dijon sauce separately when possible so the vegetables keep their texture.
Reheating Instructions
- Thaw overnight in the refrigerator when possible.
- Microwave for 2 minutes, stir or rearrange the food, then continue in 30-second increments until heated through.
- Add the cranberry Dijon drizzle after reheating.
40/400 Notes
- The cranberry Dijon sauce gives lean turkey breast a distinct fall flavor without overwhelming it.
- Use an instant-read thermometer and cook turkey to 165°F.
