Instructions

  1. Blend the egg, egg whites, cottage cheese, garlic powder, salt, and pepper until mostly smooth.
  2. Coat a nonstick skillet with cooking spray and place it over medium heat.
  3. Add the chopped chicken sausage and cook for 2 minutes, until warmed and lightly browned.
  4. Pour in the egg mixture and gently scramble until just set, 3 to 4 minutes. Transfer to a plate.
  5. Place the tortilla in the skillet. Spoon the egg and sausage mixture over one half, sprinkle with cheddar, and fold the tortilla over.
  6. Cook for 2 to 3 minutes per side, pressing gently, until crisp and the cheese has melted.
  7. Rest for 1 minute, then cut into three wedges.
