Ingredients
- 1 large egg

- 1/4 cup Daisy 4% Cottage Cheese
- 2 Amylu Chicken Breakfast Sausage Links from the Costco club pack, chopped
- 1 Mission Carb Balance Soft Taco Flour Tortilla
- 2 tablespoons shredded reduced-fat cheddar cheese
- 1/4 teaspoon garlic powder
- Pinch of salt and black pepper
- Nonstick cooking spray

Instructions
- Blend the egg, egg whites, cottage cheese, garlic powder, salt, and pepper until mostly smooth.
- Coat a nonstick skillet with cooking spray and place it over medium heat.
- Add the chopped chicken sausage and cook for 2 minutes, until warmed and lightly browned.
- Pour in the egg mixture and gently scramble until just set, 3 to 4 minutes. Transfer to a plate.
- Place the tortilla in the skillet. Spoon the egg and sausage mixture over one half, sprinkle with cheddar, and fold the tortilla over.
- Cook for 2 to 3 minutes per side, pressing gently, until crisp and the cheese has melted.
- Rest for 1 minute, then cut into three wedges.
