Ingredients
Chicken, Squash & Rice
- 1 1/2 pounds boneless skinless chicken thighs, trimmed
- 2 medium zucchini, sliced into half-moons
- 2 medium yellow squash, sliced into half-moons
- 2 cups Birds Eye Steamfresh Riced Cauliflower
- 1 1/2 cups cooked Kroger Classic Grains Jasmine Rice
- 1 tablespoon avocado oil
- 1 tablespoon minced garlic
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
Honey Balsamic Glaze
- 2 tablespoons honey
- 1/4 cup balsamic vinegar
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon minced garlic

Instructions
- Preheat the oven to 425°F and line a large sheet pan with parchment paper.
- Pat the chicken thighs dry and trim away any excess fat.
- Season the chicken with garlic powder, onion powder, salt, and black pepper.
- Add the zucchini and yellow squash to the sheet pan. Toss with the avocado oil and minced garlic.
- Arrange the chicken thighs among the vegetables.
- Whisk together the honey, balsamic vinegar, soy sauce, Dijon mustard, and minced garlic.
- Brush about half of the glaze over the chicken thighs.
- Roast for 15 minutes.
- Remove the pan from the oven, brush the chicken with the remaining glaze, and gently toss the squash.
- Return to the oven for another 8 to 10 minutes, or until the chicken reaches 165°F and the edges are browned.
- While the chicken finishes, cook the cauliflower rice according to package directions and heat the jasmine rice.
- Mix the cauliflower rice and jasmine rice together.
- Divide into four servings with 5 ounces cooked chicken, roasted zucchini and squash, and the cauliflower-jasmine rice blend.
- Spoon any thickened honey balsamic juices from the pan over the chicken before serving.
Freezer Storage
- Allow everything to cool completely.
- Divide into four individual freezer-safe containers.
- Freeze for up to 2 months.
- Keep the chicken on top of the rice and vegetables for better reheating texture.
Reheating Instructions
- Thaw overnight when possible.
- Microwave for 2 minutes, stir the rice and vegetables, then continue heating in 30-second intervals until hot.
- For better chicken texture, reheat the chicken in an air fryer at 350°F for 4 to 6 minutes and microwave the rice and vegetables separately.
