Instructions

  1. Lightly coat a large nonstick skillet with cooking spray and heat over medium-high heat.
  2. Add the diced potatoes. Season with salt and pepper, then cook for 8 to 10 minutes, stirring occasionally, until browned and crispy.
  3. Add the sliced chicken sausage and cook for 2 to 3 minutes, until heated through and lightly browned. Transfer the potatoes and sausage to a bowl.
  4. Blend the egg, egg whites, and cottage cheese until completely smooth.
  5. Reduce the skillet to medium-low heat and lightly coat it with cooking spray. Pour in the egg mixture and cook slowly, stirring gently, until the eggs are soft and fully set.
  6. Spoon the eggs over the potatoes and sausage. Sprinkle the cheddar over the hot eggs.
  7. Top with the salsa and sliced green onion. Add additional salt and pepper to taste.
