Behind the Recipe

A quick skillet glaze of sugar-free maple syrup and cinnamon turns simple chicken and sweet potato into a warm fall bowl without any oven time.

Instructions

  1. Microwave the frozen sweet potato according to the package directions until fork-tender, about 5 minutes.
  2. While the sweet potato cooks, heat the olive oil in a large skillet over medium-high heat and cook the chicken with the garlic powder, salt, and pepper until browned and cooked through, 6 to 8 minutes.
  3. Add the cooked sweet potato to the skillet with the chicken.
  4. Drizzle with the sugar-free maple syrup and sprinkle with cinnamon, tossing to coat everything evenly.
  5. Cook for 1 more minute to let the glaze warm through, then serve.

40/400 Notes

  • Swap in 2 cups of shredded rotisserie chicken to cut this down to about 10 minutes total.
  • Steam-in-bag frozen sweet potato is the fastest route to soft, glaze-ready cubes.
  • A pinch of cayenne is a nice contrast if you like a little heat with the sweetness.
