Instructions
- Microwave the frozen sweet potato according to the package directions until fork-tender, about 5 minutes.
- While the sweet potato cooks, heat the olive oil in a large skillet over medium-high heat and cook the chicken with the garlic powder, salt, and pepper until browned and cooked through, 6 to 8 minutes.
- Add the cooked sweet potato to the skillet with the chicken.
- Drizzle with the sugar-free maple syrup and sprinkle with cinnamon, tossing to coat everything evenly.
- Cook for 1 more minute to let the glaze warm through, then serve.
