Ingredients
Salmon, Green Beans & Rice
- 4 salmon fillets, 6 ounces each raw
- 2 cups fresh or frozen green beans
- 2 cups Birds Eye Steamfresh Riced Cauliflower
- 2 cups cooked Kroger Classic Grains Jasmine Rice
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Maple Glaze
- 2 tablespoons sugar-free maple syrup
- 2 teaspoons real maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon low-sodium soy sauce
- 2 cloves garlic, minced
- 1 teaspoon apple cider vinegar

Instructions
- Preheat the oven to 400°F. Line a sheet pan with parchment paper.
- Place the salmon fillets on one side of the sheet pan and the green beans on the other side.
- Toss the green beans with the olive oil, garlic powder, onion powder, 1/2 teaspoon salt, and black pepper.
- Season the salmon with the remaining 1/2 teaspoon salt and black pepper.
- Whisk together the sugar-free maple syrup, real maple syrup, Dijon mustard, soy sauce, minced garlic, and apple cider vinegar.
- Spoon the glaze evenly over the salmon fillets.
- Bake for 14 to 18 minutes, or until the salmon flakes easily with a fork and the green beans are tender.
- While the salmon bakes, cook the cauliflower rice according to package directions and heat the jasmine rice.
- Mix the cauliflower rice and jasmine rice together.
- Serve each plate with 1 salmon fillet, 1/2 cup green beans, and 1 cup cauliflower-jasmine rice blend. Spoon any extra glaze from the pan over the salmon before serving.
Freezer Storage
- Let the salmon, green beans, and rice cool completely.
- Portion into individual freezer-safe containers.
- Freeze for up to 2 months.
- For best texture, keep the salmon on top of the rice instead of underneath it.
Reheating Instructions
- Thaw overnight in the refrigerator if possible.
- Microwave for 2 to 3 minutes until warmed through.
- Add 30-second intervals if needed.
- Do not overheat the salmon or it can dry out.
