Ingredients
French Toast Casserole
- 12 slices Sara Lee Delightful White Made with Whole Grain Bread, cubed
- 6 large eggs
- 1 cup liquid egg whites
- 3 cups Daisy 4% Cottage Cheese
- 3 scoops Clean Simple Eats Simply Vanilla Protein Powder
- 1 cup unsweetened vanilla almond milk
- 2 teaspoons vanilla extract
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt

Instructions
- Lightly spray the insert of a 6-quart slow cooker with avocado oil.
- Add the bread cubes in an even layer.
- Blend the eggs, egg whites, cottage cheese, protein powder, almond milk, vanilla, cinnamon, and salt until completely smooth.
- Pour the mixture evenly over the bread. Gently press the bread down so every piece is coated.
- Cover and refrigerate the slow-cooker insert for up to 8 hours, or place it directly in the slow cooker if cooking immediately.
- Set the slow cooker to LOW for 6 hours. Use a programmable slow cooker so it automatically switches to WARM when cooking is complete.
- Turn off the slow cooker after no more than 2 hours on WARM. Divide the casserole into 6 equal portions.
- Serve each portion with 1/2 cup berries and optional sugar-free maple syrup.
Freezer Storage
- Cool the cooked casserole completely and divide into individual portions.
- If four servings remain, use a gallon-size freezer bag. If fewer than four servings remain, use quart-size freezer bags.
- Separate portions with parchment, remove excess air, and freeze for up to 2 months. Freeze the berries separately.
Reheating Instructions
- Thaw overnight in the refrigerator.
- Microwave one portion for 60 seconds, then continue in 20-second intervals until hot.
- Add fresh or thawed berries after reheating.

- A programmable slow cooker is required for a true overnight cook so the edges do not overcook.
- Do not leave the casserole on WARM longer than 2 hours.
