This is the kind of dinner I make when life is busy and I still want a balanced plate without starting from scratch. The salmon does most of the work, while a small portion of chicken rice, plenty of green beans, and a simple side salad make it feel like a complete meal. It is especially useful on sick days, travel days, or nights when cooking needs to stay easy.
Ingredients
- 5.5 ounces cooked Costco salmon
- 1/4 cup prepared Knorr Chicken Rice
- 1 cup cooked frozen green beans
- 2 cups salad greens
- 1 teaspoon homemade red-wine vinaigrette
Instructions
- Warm the salmon, chicken rice, and green beans until heated through.
- Measure 5.5 ounces of cooked salmon onto a dinner plate.
- Add 1/4 cup of prepared chicken rice and 1 cup of cooked green beans.
- Place 2 cups of salad greens on the side.
- Drizzle the salad with 1 teaspoon of vinaigrette and serve.
