Instructions

  1. Add the diced apple, cinnamon, apple pie spice, vanilla, salt, and 1 tablespoon water to a small skillet over medium heat.
  2. Cook for 5 to 6 minutes, stirring occasionally, until the apple is warm and fork-tender but still holds its shape. Remove from the heat and cool for 3 minutes.
  3. Stir the Greek yogurt, protein powder, 1 1/2 tablespoons almond butter, and 2 tablespoons water until completely smooth and thick. Add only enough extra water to reach a cheesecake-like consistency.
  4. Spoon half of the cheesecake mixture into a clear glass dessert dish and add half of the warm apples.
  5. Repeat the layers, then drizzle the remaining 1/2 tablespoon almond butter over the top.
  6. Serve immediately while the apples are warm.
